    Actually sugar comes from the sugar cane plant, which is a tall shoot. The fibre is filled with a very sweet juice, you can peel it then chew on the fibre and suck the juice out.
    Sugar is also made from sugar beets, which are also juiced. The juice is boiled to remove water and extract the sugar crystals.

    When these are bleached then they’ve been over-processed and are more harmful.

    You might want to look into xylitol if you haven’t, it’s a great alternative to sugar or fructose.

    I forgot to add, xylitol is a fantastic sugar substitute. It does get metabilized by cells through insulin, but unlike regular sweetners, it’s not a carcinogen and doesn’t feed harmful bacteria. It’s actually very good for your teeth.

    Agave or stevia are your best bet as far as sweetners go. The problem with fructose is that it’s solely metabolized by the liver. In fruit it comes in small quantities along with fibre and water, so it’s absorbed by the body at a proper rate, but when it’s refined and in large quantities, the liver can’t process it fast enough, so it becomes fat quickly and you get a fatty liver. Glucose, or plain sugar can be processed by the cells through insulin and turned to energy, or fat if it’s not used.

    Fructose comes from fruit so has a much lower GI level, maple syrup comes from a maple tree
    sugar comes from sugar. If you are looking for the lowest gi then agave syrup is great and stevia is the lowest.

    The title is deceptive – technically, the recipe should be labeled TABLE sugar free, because maple syrup & fructose ARE sugar
