    People do use different beers or white wines.
    I wouldn’t go for anything too heavy, like stout. The mussels are the centerpiece of the dish. And nothing too hoppy, because the bitterness would be much.

    @patdnwm I don’t know, we, here in Belgium, only use Belgian beer. It is and stays a Belgian Recipe ;)

    I’ve never loved bluefish that much, I find its meat is not that soft. by the way female are usually softer than males! you can oven the filets wrapped in alluminum foil (“al cartoccio”) with olive oil+spices you like or cook it in a pan with tomatoes/onion/oregano/olives etc.
    when I catch one the first thing I eat are liver, heart & gonads, which I gently heat in a pan with oil & garlic and use as pasta sauce. u can use spaghetti or whatever topping it with fresh, fine chopped parsley.

    make carob cake (its like chocolate but its not ppl who are alergic to choco eat this too…ps ask vet for mor crob recipes and more info…pss: can you do something with oysters next time?

    I make battered cod, but instead of beer in the batter (which is great to use btw), during the fall I use seasonal hard apple cider. Draft though, find it in bottles. Gives it a great citrus kick but since it’s a hard cider, still has the right mixing medium for your batter :) Hard pear cider works well too. Try it!
